Tomato Bruschetta
Maggie Beer's Tomato Bruschetta recipe is a take on the classic Italian starter which is perfect with fresh cherry tomatoes, served with sourdough and basil.

Step 1: Thickly slice the sourdough bread and toast both sides in a grill pan on the stove top or on a BBQ.
Step 2: Whilst hot, rub cut garlic clove over the toast, then coat with Extra Virgin Olive Oil.
Step 3: Place fresh tomato over the toast, add feta and freshly cracked salt and pepper to taste.
Step 4: Finally, top with fresh basil leaves and drizzle with Extra Virgin Olive Oil.
