Slow Roasted Onions

Step 1: Leave the core attached to the onions, peel them into wedges, lengthways in eighths.

Step 2: Bake onions with Extra Virgin Olive Oil and sea salt at 170C for 1 hour.

Step 3: Remove from oven and add Vino Cotto, Orange and Thyme. Return to oven for 15 minutes.

Ingredients

  1. 350g 3 medium red onions
  2. 1 tspn sea salt
  3. 30ml 1 1/2 tbspn Extra Virgin Olive Oil
  4. 20ml 1 tbspn Vino Cotto
  5. 1 tspn thyme leaves
