Nut Brown Butter Waffles with Salted Brandy Caramel, Banana and Crème Fraiche

Step 1: Place the butter into a small saucepan over a high heat and cook until it is nut brown in colour. Remove from heat and set aside.
Step 2: Place the flour and baking powder into a large mixing bowl. Add the warmed honey, egg, milk and nut brown butter then whisk until the mixture forms a smooth batter.
Step 3: Grease the waffle iron with oil and place over a medium high heat. Once the iron is hot, pour ¼ cup of waffle batter onto one side and close the iron.
Step 4: Cook for 3 minutes, then turn over and cook on the opposite side for a further 3 minutes or until the waffle is golden brown.
Step 5: Remove waffle from the iron and place onto a rack to cool. Repeat this process until all the remaining batter has been used.
Step 6: To prepare the bananas, place a non stick frying pan over a high heat. Once hot, place the sliced banana into the pan and grill until golden brown on each side, remove and set aside.
Step 7: To serve, top the waffles with the grilled banana, a spoonful of Salted Brandy Caramel and crème fraiche.
Tip: if you don’t have a waffle iron, you could cook the waffles on a non stick griddle pan.
